Drumm is made throughout the grass season, and celebrates the variations of each pasture. Drumm has a bit of soft-ripening going on around the edges, which gives it a slightly sunken-in look (and thus the name). The flavor is slightly tangy, grassy, complex, but not overpowering. It also melts beautifully for a lovely open grilled cheese sandwich. Pairs well with wine, ales, and fruits.
